Filipino Style Mechado

Ingredients:
- 1 large white onion, thinly sliced
- 5 cloves garlic, minced
- 4 lbs chuck roast, diced and seasoned with salt
- Oil, for searing
- 2 cups water
- 1 (15 oz) can tomato sauce
- 1.5 beef bouillon cubes
- 1/4 cup soy sauce
- 3 bay leaves
- Russet potatoes, peeled and diced
- Shredded or julienned carrots
- 2 tablespoons white or brown sugar
- 2 tablespoons lemon juice or calamansi juice

DIRECTIONS:
- Sear the Beef:
Heat oil in a large pot over medium heat. Sear the seasoned beef in batches, until browned on all sides. Remove and set aside.

- Sauté the Aromatics:
In the same pot, add the sliced onion and minced garlic. Sauté until the onion becomes translucent.

- Combine Ingredients:
Add the water, tomato sauce, beef bouillon cubes, soy sauce, and bay leaves to the pot. Scrape the bottom of the pot to incorporate any browned bits.Return the seared beef to the pot.

- Simmer:
Bring the mixture to a boil, then reduce heat to low and simmer, covered, for about 1 hour or until the beef is tender.

- Add Vegetables:
Add the diced potatoes and carrots to the pot.Continue simmering, covered, until the vegetables are tender.

- Season and Serve:
Stir in the sugar and lemon juice or calamansi juice.Taste and adjust seasonings as needed.
